Les îles flottantes ou œufs à la neige est un dessert typiquement français et populaire/Iles flottantes (floating islands) is a typical French recipe.

3 œufs/3 eggs
50 cl de lait/2 oz milk
70 g de sucre/2,7 oz caster sugar
1 gousse de vanille/1 vanilla pod

Faire une crème anglaise/Do a custard:
Fouetter les jaunes et le sucre jusqu’à blanchiment du mélange/Beat yolks and sugar until the mixture is becoming white
Faire bouillir le lait et la gousse de vanille/Boil up milk and vanilla pod
Verser sur les jaunes sucrés doucement mélanger/Pour on the yolks mixture slowly, stire.
Chauffer doucement le mélange 5′/Heat over low heat for 5′
Verser dans des verrines/Pour into glasses

Monter les blancs en neige fermement avec une pincée de sel et 15 g de sucre/Whisk the egg whites with a pinch of salt and 0,5 oz caster sugar
Façonner des quenelles et faire cuire au microondes à puissance minimum, 15”/Do quenelles with a tablespoon and cook 15” in micowave with the lower power.
Ou les pocher dans de l’eau bouillante, 30” de chaque côté/Or cook in boiled water, 30” in each face
Les déposer sur le crème anglaise/Put on the custard

Faire un caramel avec 50 g de sucre et 2 cuillères à soupe d’eau/Do a caramel with 2 oz sugar and 2 water tablespoons
Couler sur les blancs/Pour on white eggs
Réfrigérer 2 h/2 hours in fridge

The original recipe is from this book.

1 can (14.5 oz) coconut milk
2 tbs curry paste (I used red, but green or yellow would also work)
3 lime leaves
1 tbs fish sauce
2 thai chili peppers
1 lb skinless, boneless chicken thighs, cut into 1-inch cubes
Cooked rice
Long beans, cooked

Over low heat combine the coconut milk, curry paste, lime leaves, fish sauce and peppers. Stir until heated through, about five minutes. Do not boil.

Add the chicken and continue to cook on low, stirring every few minutes. Don’t let it get above a simmer. Cook until chicken is cooked throught, about 20-25 minutes.

Serve hot over rice. I added the long beans but you can use cilantro as a garnish instead.

[EN] I got the recipe from here although I did steam the cabbage first (less than 10 min), so you don’t need to use so much oil. And I didn’t use nuts either, garlic worked really well. This time I added some lemon juice while frying, that changes the colour from purple lombarda to pink.

[ES] Se sofríe el ajo y más tarde se añade la col. Yo la he hecho al vapor antes, para usar menos aceite. Es un plato superrápido, en menos de diez minutos está en la mesa. Esta vez le he añadido un chorrito de limón mientras sofreía, que le cambia másgicamente el color de morado a rosa.

I went on holiday to Marrakech and loved drinking this tea … I asked the guy who made it at the tea shop near Jamaa El Fna for the recipe and here it is … By the way I have tried this at home and yes it is gorgeous

Ingredients
1 rounded teaspoon green tea
5 teaspoons sugar (granulated)
12-14 large fresh mint leaves
1 cup water
1 sprig of mint per glass to be served

Method
Mix tea and sugar. Crush mint leaves in water. Bring to boil. Pour over tea and sugar. Let steep for 5 minutes. Place small sprig of mint in two thick 4-ounce juice glasses. Strain tea into glasses. Drink while hot.

The man I watched make this tea in Marrakech used one of the small brass coffeemakers which you can buy at Jamaa El Fna. He boiled the mint leaves, tea and sugar over the fire. Then he strained this over the sprigs of mint in the glass.
